Hello Folks,

The Christmas and New Years holidays are fast approaching us. The Jones Family has been blessed with many of our customers traveling out to the winery to purchase cases of our Oklahoma wines to give as gifts.

When purchasing at our special case price, Nuyaka Creek Wines make an inexpensive gift for those special people that you want to remember. Local wine is always a tasteful choice as a token of appreciation for services or as a gift to the hostess of a holiday party.

We will be hosting an open house on Thursday, December 20th at the winery from Noon until 6:00 PM.

We hope many of you can come out and enjoy our Christmas present to you of good food and hospitality in appreciation of your patronage all year.

We will be serving up Country Ham basted in our own Petite Pecan wine and Pineapple glaze. We will have other dishes prepared with some of our wines. There will be lots of free food and door prizes. Rate our recipes and bring some of your own to be included in a future Nuyaka Creek Winery Cookbook.

You will have the opportunity to see our new building in process. Our dream of an underground winemaking facility and a new tasting room are blossoming and will be ready for occupation early in 2008. The tasting room will be on top of the cellar and the view of area wildlife and foliage will be spectacular.

One of the reasons an earthsheltered structure was important to us is Climate Control. With energy costs so high and our desire to conserve, we felt building underground gave us the temperature control naturally with minimal backup needed. The gravity flow potential for the wine processing is another aspect that appealed to our energy conserving concept.

Come check out our work and catch up on some holiday shopping… by tasting a wide range of great wines! Our latest batch of Oklahoma Merlot is out of the cellar and ready for your review.

We will be open our regular hours including both Saturday and Sunday between now and Christmas. We will be closed on Christmas Eve and Christmas Day. We wish all of you and yours the very best Christmas and the very best New Year ever.

------------- Petite Pecan Brownies Recipe ----------------

6 ounces unsweetened chocolate
1/2 tsp salt
3/4 cup butter (1 1/2 sticks)
2 3/4 cups sugar
4 eggs
1 1/2 cups all-purpose flour
1 1/2 cups chopped pecans
3 tablespoons Nuyaka Creek Petite Pecan wine

Preheat oven to 375 degrees F. Butter and lightly flour a 9 x 13 x 2 inch baking pan. (If you are using a glass dish place it on a cookie sheet while baking) Melt chocolate and butter over low heat, double boiler or microwave, watch and stir often to avoid scorching. When melted set aside to cool.

In a mixing bowl, put the eggs, pecan wine, salt and sugar and beat well using an electric mixer until blended, then add the flour, stirring until well blended. Stir in the pecans.

Spread evenly in the prepared pan and bake for 25 minutes. When done the center should be a little moist, so don't overbake. Remove from oven and let cool a couple of hours before cutting into squares.
